This is a coating for chicken wings that creates crispy wings using the the Zero-to 400 method on a pellet smoker.

Ingredients
- •1/3 cup Cornstarch
- •1/3 cup Baking Powder
- •1 cup All Purpose Flour
Equipment
- •Wire Whisk
- •Mixing Bowl
- •Ziploc bag or airtight container

1. Mix the ingredients in a mixing bowl and store in a Ziploc bag or airtight container

2. To use, sprinkle over wings as you toss them until evenly coated a few minutes before placing on the grill for the Zero-to-400 method
Notes
This is a prep item and makes enough for several batches of wings. You will use a roughly 2 Tablespoons for each pound of chicken wings depending on the size. Wings should be dry brined uncovered on a wire rack overnight in a refrigerator prior to dusting and cooking.
